The Best Salmon Recipe
The most important tip I can give is to not overcook your salmon. If you overcook it the salmon will be dry. Salmon only needs to be cooked to a temp of 135 degrees.
Ingredients
The general rule of thumb is to get 1/3 to 1/2 lb. of salmon per person. This recipe will cover about 2-3 lbs of salmon. If you need more sauce then double it! More sauce is better!
Fresh or Frozen Salmon - (We prefer Fresh) See the tip above to figure out how much salmon you need
5-7 Cherry tomatoes cut in half
A Bunch of Fresh basil leaves (clean & dry) - Sliced thin
2-3 cloves of garlic - minced
¼ cup Virgin olive oil
⅓ cup Balsamic vinegar
2 TBL Good Seasons Italian dry salad dressing
¼ of shredded cheese ( I suggest an Italian blend or parmesan)
Salt & Pepper to taste
Balsamic glaze (used on the top after cooking) - you can make your own or purchase it. This is very important don't skip it!
Preheat oven 350 degrees, This will come together fast. I also suggest wrapping your baking tray in foil for easy cleanup!
Directions
Start by adding Olive oil, Balsamic, Garlic, and Good Season dry salad dressing in a bowl or glass measuring cup and mix well till blended together.
Add remaining sauce ingredients - tomatoes, basil, shredded cheese, and salt and pepper. Mix well. Set aside
Grab a foil-lined baking tray or dish, and place salmon on a foil-lined tray in the middle
Slowly pour the sauce all over the salmon. You want to pour slowly and cover the salmon completely.
Place salmon in 350 pre-heated oven and bake for 15-25 mins. This will depend on how thick and how large your piece of salmon is.
