Weeknight Lemon Chicken

So easy, and delicious. It's perfect for those busy weeknights when you need to get dinner on the table quickly. This chicken pairs perfectly with any side dish like rice, mashed potatoes, or sweet potatoes. Add your favorite vegetable for a complete and delicious meal.



Ingredients


Grab all your ingredients before you start. This recipe comes together fast. So slice and dice before you start.

  • 3-4 tablespoons olive oil

  • 2 lbs of chicken breast, thinly sliced

  • Kosher salt and freshly ground black pepper, to taste

  • Dried Thyme and Garlic Power, to taste

  • ⅓ cup of flour for dreading + 2 tablespoons for sauce

  • 3 cloves garlic, minced

  • 1 medium onion, diced

  • 2 tablespoons of butter + 1 tablespoon to be added at the end

  • 1 cup chicken stock or water + ½ chicken bullion cube

  • 2 tablespoons freshly squeezed lemon juice


Directions

  1. Start preheating the frying pan on medium heat and add olive oil.

  2. Season both sides of the chicken with salt, pepper, garlic powder, and thyme.

  3. Dredge each piece of chicken in flour on both sides.

  4. Cook chicken on both sides till the chicken reads 165 degrees. About 5-7 minutes. Work in batches and put the finished chicken on a platter. Set aside and keep warm.

  5. After all the chicken has been cooked. Use the same frying pan and add butter and diced onion. Cook until caramelized 7-10 minutes.

  6. Add garlic. Cook for 1 minute till fragrant.

  7. Turn heat down to low, Wisk in 2 Tablespoons of flour to the pan. Cook for 2 minutes.

  8. Add water and bullion or chicken stock. Scrape any brown bits from the bottom. That has all the flavor.

  9. Bring to a boil and reduce heat to low. Stirring occasionally, until reduced and slightly thickened, about 3-4 minutes

  10. Stir in lemon juice and 1 tablespoon of butter, mix well and taste. Season with salt and pepper if needed. Return all chicken to the pan and warm the chicken in the sauce. Enjoy!
